Stinking Bishop is a handmade full fat pasteurised cow’s milk soft cheese. The rind is washed in Perry, an alcoholic drink made with the local variety of Stinking Bishop pear, which gives the cheese its name. The alcoholic wash gives the cheese its distinctive pungent aroma and brown/pink rind colour.

The cheese should be the texture of thick clotted cream but on occasions is spoonable rather than sliceable! Stinking Bishop was made infamous after making a cameo appearance in “Curse of the Were-Rabbit” – a Wallace & Gromit film. This cheese may smell powerfully pungent, but the flavour is rather delicate and herbaceous.
